Apple and celery salad recipe
To make the lighter version of this salad you will need:
• 1 celery root, peeled and cut into several pieces;
• 6 radishes;
• 1-2 medium green apples, sliced;
• 2 carrots;
• juice of one lemon;
• 2 teaspoons of vinegar;
• 200 g of plain yogurt;
• 2 tablespoons of mustard;
• 2 tablespoons of olive oil;
• Salt and pepper to taste;
Here is how you prepare it
Start by grating the carrots, the celery, the apples and the radishes. If you want, you can cut some of the vegetables with a knife, to be sliced bigger. Mix all chopped vegetables in a bowl and let them cool a little, while you prepare a tasty yogurt dressing.
Mix the lemon juice and vinegar first. Then add the yogurt and mustard, drip the olive oil and stir until you get a thin dressing. Add salt and pepper and chopped fresh herbs to taste.
